Aji-No-Moto is widely used in Peru to season dishes. Similar to salt and nothing like it, this umami seasoning is used in many Peruvian dishes!
So much to say about Aji-No-Moto, from the fact that its name means "the essence of flavor", to how it just enhances dishes.
Monosodium glutamate and its umami flavor (not salty, not sweet, not sour, not bitter... just... tasty) was discovered in Japan in the early 1900s, and since then it's been used in many of the world's top cuisines to power up flavor and make craving-inducing food.
I used this for a copy cat recipe for Jimmy Dean sausage and it tastes just like Jimmy Dean sausage.... I give it a 10 and now use in many other recipes
